Fake Wedding Cakes & Better than....cake recipe

August in our town with 9 months of winter is definately the time for weddings.  With 2 weddings on the way....we've kind of got wedding on the brain right now. (Oh woops...you don't know about the other one YET!..soon) So having a friends bridal shower this week we decided to bring back the ole' towel cake shower gift...you know the fake wedding cakes made with towels.  I'm not bragging...by any means...but we think we're pretty good at making them.  So I'll show you the 2 that we've made.  The other was for a niece 3 years ago.  You can find lots of tutorials on line. Funny thing, her wedding cake didn't turn out...should I say very photogentic...so they used the towel cake in it's place. You can't even tell from far away and I was OK with that.

Here's pics...and then while we're at it, I'll throw in the best cake recipe ever...no not for a wedding cake but just to eat! Another funny thing...one of my good friends from Canada served this at her daughter's reception and didn't even realize the name...she just thought it was good cake! She was rather shocked when I asked her if she did that on purpose.

 Better than (shopping, whatever, #@!&*) Cake 
1 Devils' Food Cake Mix
-Mix & Bake per instructions, cool.
1 jar caramel sauce
1 jar chocolate sauce
1 8-oz. cool whip, thawed
1 bag Heath chips
I use the end of the handle on a wooden spoon and poke holes in the cake about 1" apart all over the cake.  Fill the holes with caramel.  Feel generous and use a lot.  Completely frost cake with cool whip.  Sprinkle Heath chips over cake before the cool whip if desired and again on top of the cool whip.  The more, the merrier!  Then with a chocolate and a caramel ice-cream topping sqeeze bottle.  Drizzle it over top of the cake in a quick whipping motion.  This will create thin, beautiful lines on your cake.  Keep refrigerated til gone!

Memory blogging - One Year Ago today - August 18, 2010

Today is a memory Blog. I've had a lot of milestones in my life and am always very aware of them. I have wonderful memories of one year ago today; on of the best days ever! That day was on my mind for 2 solid years and I couldn't wait for it to get here and now... it's one year later. I still have the countdown on my phone. It had to be the windiest day on record and we were fighting the wind and the clock to get our fabulous welcome home sign hung up. This made us almost late for the the airport. Our RM returned home via the Idaho Falls airport at 2:00pm from CHILE. I know I cried harder and hugged tighter than when he left and I couldn't quit staring at him. Those first couple of weeks I had to pinch myself to see if it was really him. I worried about him being homesick for Chile and I know he was but I was selfish and very glad to have him back. It has been a wonderful year and to have him home again. When we talk on the phone I still have a little thing inside of me (I really don't know what to call it) that wonders "should we really be talking on the phone"? Then I come back to reality and realize it's OK and I'm so happy to be able to just pick up the phone and call or text anytime. Lots of changes in one year have come to our RM as this past year has flown by of course, much faster than the year before it and definately the year before that....I remember just before he got home talking about how was he ever going to get past the missionary stage to start asking girls out on a date...and kissing!!!....well that would be forever and MARRIAGE!!! How on earth do you get to that point??? I told him it would all come about naturally...baby steps. Well, I'm so thankful for a brave son who took all those baby steps because now he's engaged to be married to his WONDERFUL!!! sweetheart. We know Heavenly Father has blessed him for those 2 years as many good things have happened in the past year and many more are on the horizon. Well, bunch, enjoy the wonderful memories of one year ago today...yep, I'm crying again.

FREE Camping...we're hooked!

Somehow, we found a really wonderful camping spot. It's now turned into our favorite. We like it so much we'll drag everything out to the trailer for even just one night, even to celebrate somebody's birthday and even if we have to give the dog 2 baths!. Here are our top 10 reasons we like it so much:
#10 FIREWOOD - free firewood and lots of it! (You know how they charge you $5 for this little bundle of sticks!)
#9 QUIET & peaceful- not a soul around...maybe an occasional car, 4-wheeler or a moo from a cow passing through
#8 TRAILS - lots of trails to explore with very happy, sniffing dogs
#7 SHADY - nice cool shady pines which smell so good and the gentle breeze drifting
#6 DOG FREEDOM - they don't have to be on leashes and can run and play and explore
#5 CLEAN - no dirty dirt just nice soft grass
#4 NO MOSQUITOS - it's almost like paradies...there are a few pesky flies however
#3 CLOSE - 22.4 miles from our house and less than 30 minutes to get there. No busy freeways or highways to manuvure. A gorgeous drive through the dry farms of grain & potatoes
#2 FREE - yes! totally FREE - no annoying and exhorbant hookup fees
#1 HUCKLEBERRIES!!! Yes, it's right in the middle of LOTS of huckleberries!

Moving Day...

Well, today is moving day....not from my house (I wish) but from my wonderful, darling office into a dreary space. My super kind boss so kindly gave away our offices and agreed for us to move into the old dungeon.....UGGG!!! When he so kindly gave away the offices he unknowingly also gave away our wonderful parking spaces...we now have no parking spaces unless we want to pay the city $75 for the privledge of parking on their streets as an employee who had free employee parking! Double UGGG!!! So today I'm sad and I kept hoping it was all a bad dream but the movers are coming today...I guess it didn't go away. Sad, sad day.......I guess the only thing that keeps me going is remembering that one of the reasons I like work so much is my super kind boss....It is his kindness that does keep me going day after day.
